Black rice has always been the favorite topic of conversation among foodies. Some suggest staying away, while others call it a daily staple in our diets. Some even guide switching to healthier options like red rice, brown rice, etc. However, “forbidden rice” is in high demand among the more nutritious choices.

Black rice used to be named forbidden rice. It dates back to antique China, where the Chinese ate a black rice variant. They ate it for the kidneys, stomach and liver. But soon, some Chinese nobles confiscated these grains and stopped public consumption. Later, it became the upper classes and elites in limited quantities and under control. Citizens were not allowed to eat it, hence the name forbidden rice.

It contains the total amount of antioxidants of any rice variety. The jet black or purple-blue of black rice indicates its antioxidant properties. In addition, the outermost layer of the  grain contains large amounts of an antioxidant called anthocyanin. Anthocyanin helps prevent cardiovascular disease and also helps improve brain function and reduce inflammation.

Each half cup of black rice contains three grams of fiber. The rich fiber content helps regulate bowel movements, preventing constipation, diarrheic and gas. Fiber also helps bind toxins and waste in the digestive tract and eliminates them once the digestive cycle is complete. Black Rice Salad

Ingredients

  • 150 grams of black rice
  • 4cm ginger,
  • 200 grams of corn
  • 150 g mango, diced
  • basil for garnish
  • Two red chilies, deseeded and cut into small pieces
  • pepper and salt

Instructions

Place the rice, ginger slices and water in a medium saucepan and turn the heat high. Bring to a boil and cook the rice. Once cooked, drain and let cool.

Prepare the dressing by mixing the lime, ginger, and vinegar in a measuring cup. Then, use an immersion blender to mix everything.

Combine the rice, mango, basil, and red peppers in a bowl. Add half of the vinaigrette and mix everything.

Ingredients

Black Rice: 1 Cup

Peeled Urid Dal: 1/2 Cup

Rock Salt: 1 Teaspoon

Desi Ghee: 1 Tbsp.

Water: 2 Cups

Method:

  • Soak the rice and daal in lukewarm water for 6 hours.
  • Drain the water and routine the rice and dal with 2 cups of water.
  • Leave the dough to ferment overnight.
  • Pour the ghee into a non-stick pan and spread the batter as thinly as possible with a spoon.
  • Serve with the chutney of your choice.
